Maple cream cheese plus bacon plus Guinness Stout and chocolate makes for one great cupcakes

Valentines day doesn’t have to be all red and pink. Sometimes we need to make our men some man-cakes.  These cupcakes are chocolate cupcakes with a hint of Guinness Stout topped with maple cream cheese and bacon. I myself am not a fan of Guinness, or dark beers in general, but I am totally hooked on these cupcakes. You can smell the stout oozing out of them.

I scoured the Internet looking for the best stout cupcake recipe. I knew I wanted something with a hint of espresso, and I have heard that it really enhances the chocolate flavors. I ended up choosing one from the blog, My Baking Addiction. Head over to her blog for the stout cupcake recipe.

Guinness Stout Cupcake with Maple Cream Cheese and Bacon

Here is what you will need for these cupcakes:

I have never worked with an instant espresso powder before, so I Googled it while I was in the grocery store and this was the most popular brand I saw. I microwaved the water for about 10 seconds and the powder dissolved very quickly.

You can make the bacon however you would like, and allow it to cool completely. Let me save you a little time and frustration: you can cook bacon in the oven! All you need to do is line a cookie sheet (that has a raised edge) with tin foil. Cook the bacon at 400° for about 20 minutes until desired crispiness is reached. Halfway through I pull the bacon out and empty the grease out of the pan.

Maple Cream Cheese
Recipe by Martha Stewart

1 Package (8 oz.) cream cheese at room temperature

1/2 C (1 stick) Unsalted butter at room temperature

1 tbsp Pure maple syrup

1/2 tsp Pure vanilla extract

2 C Confectionary sugar

  • Cream together cream cheese and butter until well blended and smooth.
  • Add maple syrup and vanilla.
  • Slowly add confectionary sugar and beat until well blended.
  • Put in the refrigerator for about 30 minutes to help stiffen the frosting. This is optional, but I like the cream cheese frosting to have a little more body when I put it on the cupcake.
  • I also prefer a stronger maple syrup flavor, so I added an additional teaspoon or two.

Guinness Stout Cupcakes

To assemble the man-cake, you must bake your cupcakes without a liner. See my tip and techniques for baking cupcakes without liners. If you bake them with a liner and you later remove it, the edges of the cupcake will dry out very quickly (Note the liners in my photos were used to help transport these). Slather some maple cream cheese on the top and bottom of the cupcake and lay a few pieces of bacon down. You’ve got yourself a bacon man-cake.  Disclaimer: woman enjoy these also!

This also proves my theory that everything is better with bacon, right?
