Samoa Cupcakes Shooters

Cupcakes never go to waste in my house, well as much as I can help it, but I can’t eat them all myself! Earlier this week, I made the Thin Mint Mini Cakes and I had leftover cake. So I made some Samoa Cupcake Shooters to continue on with Girl Scout Cookie week!

Now, when I was a Girl Scout, we called these Caramel Delights. No one here knows what I am talking about when I say Caramel Delights, so for this post, I am going with Samoas!

Samoa Cupcakes Shooters

These are pretty easy to make and they taste AH-mazing. Between the chocolate, caramel and coconut, your mouth will be watering for more. Here is what you need:

2-3 C Chocolate cake crumbs

6 Samoa cookies

1/2 C Chocolate ganache or melting chocolate

1/2 C Caramel sauce (I used Smuckers)

1/2 C Toasted Coconut

1 batch Coconut Swiss Meringue Buttercream

Christmas Funfetti Cupcakes

I make tons of chocolate cupcakes from my favorite doctored cake mix recipe, but I have never really tried a yellow or white doctored cake mix. A friend of mine at work got his wisdom teeth taken out, and since he couldn’t eat much of any solid foods, he asked me to make him cupcakes. His request: funfetti. I have never made a homemade funfetti recipe, so I thought it would be the perfect time to try. He wouldn’t be able to taste much anyway, right?

I perused the internet for ideas; I was looking for something somewhat easy. I landed on the  Your Cup of Cake blog. She has lots of very intriguing cupcake recipes and lot of doctored cake mix recipes. I decided I would start with a white-based cupcake and add some Christmas colored sprinkles.

Chocolate Caramel Moose Munch Explosion Cupcake

Okay, this cupcake was too fun to make. It’s ooey, gooey and chocolaty delicious; I am still cleaning my camera off after this photo shoot. The Moose Munch Cupcake is  a chocolate cupcake, dipped in chocolate ganache, topped with caramel Swiss meringue buttercream, Moose Munch popcorn and drizzled with caramel and chocolate. It’s a chocolate caramel cupcake explosion!

Are you ready for this?

Moose munch is a wildly popular snack around this time of year. Caramel popcorn, plus chocolate covered caramel popcorn, plus caramel covered cashews and almonds. Don’t mind if I do. I thought I could whip together a few ingredients and turn this into an uber sugary sweet cupcake.

National Cupcake Day; Hot Chocolate Peppermint Mousse Cupcakes

Tomorrow, December 15th, is National Cupcake Day!!! That has to be the best food holiday ever! This is the one time I wished I lived in a major city, so I could visit all the amazing cupcake stores in one day! Instead, I will celebrate with myself and force my boyfriend to eat cupcakes with me; it shouldn’t be too hard.

Easy Christmas Tree Cupcakes

Tis the season, right? Endless cupcake and cookie ideas and only 25 days to try them all! I wanted to share this idea with you because it is so easy to do! It doesn’t require any piping bags or special tips or complicated frosting recipes. Perfect for kids as well!

Easy assembly and it makes for a cute decor!

You start with your favorite cupcake recipe, bake’em and let’em cool. For the Christmas tree cupcakes, it is better to have a cupcake that is a little denser so it can withstand the weight of the frosting and the tree.
