As September gets closer, I get more and more excited for fall. Beyond apples, changing leaves and cooler weather, it is also really the start of snowboard season. In September there are video premieres, new products start shipping and pre-season contests are in full swing. What does that have to do with desserts? Absolutely nothing, except that I have multiple reasons to look forward to September that aren’t just dessert related. Fall is my favorite season, although fall on the west coast is so different from the east coast. But one thing is the same; fall means apple season.
I recently heard about a contest hosted by one of my favorite bloggers, Ashton from Something Swanky. She teamed up with Lucky Leaf for recipe contest featuring their pie filling. I love pie, and I love small sized desserts, so I decided to create bite-sized Deep Fried Apple Pies. These mini “dumplings” are a pie crust, filled with apple pie filling, deep fried and rolled in cinnamon sugar. Oh my gosh are these delicious.
They are packed with some of my favorite flavors including maple and cinnamon. I always add a little maple syrup to my recipes. I used a deep fryer to make these, but you can easily cook these on the stove. This recipe is so easy because you can use prepared pie crust and Lucky Leaf’s apple pie filling.
Oh man, this is an exciting week for me! On Thursday, I am traveling to Austin to attend the Blogher Food Conference. I signed up in December, so I have been anxiously awaiting this week for quite some time. I am really looking forward to meeting the bloggers that I follow and have come to know through the past few months. I am trying to plan a visit to some local bakeries and eateries in the area. This is one of my favorite things to do when I visit a new city. If you have any recommendations, please send them my way! I plan to not eat at all this week so I can have some storage space for the extra calories, haha.
So yea, back to these muffins. When my parents read this, I am sure they will be shaking their head at me for sharing this story. When we were younger, we would always go camping in New Hampshire during the summer and my parents made us go pick blueberries. Now as much as I like blueberries, do you know how long it takes to fill a gallon size bucket with mini blueberries? A freaking long time! I just recall having to wear long pants and a long shirt and sit in the hot sun while my parents tried to have three young kids help them pick two or three gallons of blueberries. As an adult, I much prefer to buy my blueberries at the grocery store. Sorry mom and dad. Continue reading
What’s a poke cake? I started seeing all these different poke cakes on Pinterest, and I had never heard of such a thing. Basically, a poke cake is a cake, which you poke holes in and pour pudding or something similar over the top and allow it to absorb into the cake. You top it off with whipped cream and/or other toppings. Umm, cool! So I did some research and decided to try a French Toast Poke Cake.
What does my cake consist of? It is a cinnamon cake, loaded with maple syrup and vanilla pudding, topped with whipped cream. It’s pretty much dessert for breakfast, or breakfast for dessert. Either way you need to try this! Continue reading
Do you like easy to make desserts that will impress your friends? I thought so! I made these dessert nachos last weekend and then proceeded to each half of them by myself.
I first saw dessert nachos when I was in high school. I was visiting one of my friends in Hawaii and we went to dinner before I had to board my long flight back to Vermont. Her mom asked if anyone wanted dessert, and everyone, except my friend passed on the idea. She ordered a massive plate of dessert nachos. When they showed up at the table, she literally would not share, declaring that anyone could order their own plate if they wanted some. She turned to me and said, “You have known me since kindergarten; you know I don’t share my food. I love you, but buzz off”. Despite this betrayal, she is still one my best friends, but guess what, I am NOT sharing these dessert nachos with her! XO.
