Black Bottom Cupcakes

The cupcakes your man makes

 I called this series, Baking with Boys. From the beginning of our relationship, I knew my boyfriend liked chocolate cake, but he always talked about the chocolate cream cheese cupcakes (black bottom cupcakes) his mother used to make.

The first birthday we shared together, I was super stressed about making the best black bottom cake I could, because he didn’t have the recipe. I guess I did okay since I am still around. Finally after several months he found the recipe from his mom. I was expecting something really fancy and complicated. Turns out they’re super easy to make. He has been requesting that I make them ever since. I guess he got sick of waiting.

 While I was busy shooting my Cadbury Cookie Brittle, he insisted on making black bottom cupcakes at 9 o’clock at night. He wanted to do it all himself, to which I of course said go right ahead, just clean up afterwards! I love watching him bake, because it makes me laugh every time.

He uses as few dishes as possible. This results in him melting butter in the glass measuring cup and using the same cup to measure ALL of his dry ingredients plus oil, milk and whatever else is required. I am going to tell the rest of this story in photos taken on my iphone. Read on, I promise it’s worth it.  Also, I should tell you that he edits my posts, and may or may not agree with my recount of the story.

He’s pretty serious about his measuring. As you should be.

This is the face of concentration. He has two rules. His first rule is that he “doesn’t do eggs”, which means I have to be called in to crack the eggs.

Mocha Irish Cream Cupcake for Two

Desserts for two

I fell in love with small portioned desserts after I made Champagne Cupcakes for Two on New Years Eve. The thought of enjoying cupcakes without having to make a huge batch (and then feel guilty about eating them all) was just awesome! I have been testing and consuming desserts in small batches ever since. I recently purchased the cookbook, Small Batch Baking by Debby Maugans Nakos. I made the mocha cupcakes, filled them with Bailey’s Irish Cream infused ganache and topped it off with Chocolate Bailey’s Irish Cream whipped cream!

This cookbook has the perfect mocha cupcake. It reminds me of my favorite chocolate cupcake. The espresso taste is prevalent but not overwhelming. The sour cream in the recipe helps maintain a moist, light center. Besides, who doesn’t love a boozy cupcake?

This recipe is from Small Batch Baking by Debby Maugans Nakos. If you like to bake for just a few, I highly recommend checking out this book. It is full of mini cakes, pie, cookies and tons of other desserts!

Cupcake Camp Conejo Valley Event Recap!

Whew! This weekend flew by!! If you follow me on FacebookInstagram or Twitter, you were probably sick of hearing about all the baking I was doing! I spent all day Saturday baking 170 cupcakes for the 2nd Annual Cupcake Camp Conejo Valley hosted by Cupcakes for Cancer. The event was held at the Westlake Village Inn in Westlake, California. This was my first year participating, and as such, my level of excitement was competing with my level of nerves.

It took me several weeks of baking to determine which cupcake I wanted to make, and this would be the largest batch of baking I have ever done. I decided on Triple Chocolate Brownie Cupcakes! They were a HUGE hit and I got rid of every last one (if you include the 6 I gave to my neighbor because she was so awesome)! Be sure to come back tomorrow, I am going to share the recipe with you!

I was instantly overwhelmed by the numbers of cupcakes, variety of flavors and level of effort put into the event. I am not sure how it breaks down, but I was told there were 60 bakers showcasing their creations including professionals, amateurs and youth bakers. I estimated there was at least 1000 people in attendance, but I am sure there were more!

Thin Mint Cookie Mini Cakes

Calling all cookie lovers! When I was a little girl, I joined the Girl Scouts as a Brownie Scout and participated until I was in fifth grade. I always loved selling cookies, but in my town, we would sell door to door to our neighbors. It is quite the opposite in California, so I learned after my first year here that I had to find where the Girl Scouts would be selling cookies. I gotta have myself some Thin Mints!

I wanted to try something different with my Thin Mints this year, and since I am a major fan of frosting, I thought this would be a no brainer. I am absolutely in love with these, because the combination of the cake and the frosting reminds me of mint chip ice cream; which is my all time favorite ice cream.

 I used my go-to chocolate cake recipe from the Cake Mix Doctor and baked it in a 9×13” pan. You can plan this out ahead of time by deciding what size cakes you are going to make to see how many you will get out of your pan. My recipe makes 12 mini cakes.

Chocolate Guinness Stout Cupcakes with Maple Cream Cheese and Bacon (Man-cakes)

Maple cream cheese plus bacon plus Guinness Stout and chocolate makes for one great cupcakes

Valentines day doesn’t have to be all red and pink. Sometimes we need to make our men some man-cakes.  These cupcakes are chocolate cupcakes with a hint of Guinness Stout topped with maple cream cheese and bacon. I myself am not a fan of Guinness, or dark beers in general, but I am totally hooked on these cupcakes. You can smell the stout oozing out of them.

I scoured the Internet looking for the best stout cupcake recipe. I knew I wanted something with a hint of espresso, and I have heard that it really enhances the chocolate flavors. I ended up choosing one from the blog, My Baking Addiction. Head over to her blog for the stout cupcake recipe.
