If you are reading this post, that means I survived the wedding! I can’t wait to tell you guys about it, after I am done sleeping. Except that oh wait, I am heading to Minnesota on Thursday for my cousin’s wedding. It has been about eight years since the family was all together last. A few of my cousins have children now that I haven’t met so I am very excited to see everyone. Back to back weddings, only this time I just get to eat the desserts instead of making them!

With the 4th of July approaching (I can’t even believe it), I have been on the hunt for easy to prepare recipes that are on the lighter side. The blueberry pie parfaits are layered with crushed piecrust, lemon infused blueberry cream cheese and fresh blueberries.

I love a good blueberry pie, but I wasn’t looking to spend half a day trying to make one. Instead, I baked just the crust by cutting them into small circles and letting them cool. While the piecrust was cooling, I made a blueberry cream cheese with a lemon zest. The layer of fresh blueberries in the parfaits is a great compliment to the cream cheese.  You can make your own piecrust, but since this post is about being easy, go ahead and buy a prepared piecrust. I like to think that a majority of the recipes I post on this blog are relatively easy for you to make. We don’t all have the time to spend hours in the kitchen preparing a fancy dessert. I think you can still make fancy desserts while enjoying the rest of your day.

Last week I received another shipment of Walkers shortbread cookies. This time, my shipment contained chocolate shortbreads! I knew I wanted to create something different for this post. Since 2012, Walkers has partnered with The American Society for the Prevention of Cruelty to Animals® (ASPCA). This year, Walkers will donate a minimum of $50,000 to the ASPCA through the sales of their Scottie Dog shortbread cookies. In today’s recipe, I used their new Chocolate Scottie Dog Shortbread cookies, which use genuine Belgian chocolate, butter, flour, sugar and a pinch of salt. The recipe below will make four parfaits. To serve a larger crowd, use two boxes of Chocolate Scottie Dog Shortbread cookies and double the ganache recipe. Because it is difficult to half the ingredients for the mousse, you will end up with a lot of extra mousse. May I suggest diving into the leftovers head first? Continue reading

Gluten-free Raspberry Crisp

I am so thankful for my parents and their green thumbs, I know I don’t have it in me. So for now I will continue to be thankful for the boxes of fruit and veggies they send me in the summer! When I was little, we had loads of raspberries each summer from our garden. I have to say, raspberries are my favorite fruit, with strawberries in close second of coarse.

Today’s raspberry crisps are both gluten-free and easy to take on the go. My serving size for this recipe is for four people, but it can easily be doubled and baked in an 8×8 inch baking pan to serve a larger group. I favor the “crisp” part of the raspberry crisp, so I loaded both the top and bottom full. I made these in small jelly jars so I could pack them up and take to go. It’s perfect for a summer BBQ.

Easter Dirt Mousse Cups

One of the first desserts I recall making on my own was my grandmother’s “Dirt” recipe. Since it doesn’t require using an oven, it was easy for me to make when I was a little girl and it was a favorite of mine.

I wanted to take the classic Oreo and chocolate pudding recipe for dirt and make it a springtime treat. This is a simple dessert to put together than is a guaranteed crowd pleaser. I used Golden Oreos and vanilla pudding. Continue reading

Samoa Cupcakes Shooters

Cupcakes never go to waste in my house, well as much as I can help it, but I can’t eat them all myself! Earlier this week, I made the Thin Mint Mini Cakes and I had leftover cake. So I made some Samoa Cupcake Shooters to continue on with Girl Scout Cookie week!

Now, when I was a Girl Scout, we called these Caramel Delights. No one here knows what I am talking about when I say Caramel Delights, so for this post, I am going with Samoas!

Samoa Cupcakes Shooters

These are pretty easy to make and they taste AH-mazing. Between the chocolate, caramel and coconut, your mouth will be watering for more. Here is what you need:

2-3 C Chocolate cake crumbs

6 Samoa cookies

1/2 C Chocolate ganache or melting chocolate

1/2 C Caramel sauce (I used Smuckers)

1/2 C Toasted Coconut

1 batch Coconut Swiss Meringue Buttercream
