This post is long over due, as someone’s birthday (not mine) was a little over a month and a half ago. This someone shall remain nameless, but if you follow my blog, you probably know who I am talking about; he hates his birthday. Whatever. He did however request a mini cake, which I was really excited about because it gave me an excuse to buy 6” cake pans!
He also specifically requested chocolate cake from the Ghirardelli Cookbook, which I was really excited about. The first cake we baked together was a chocolate cake with chocolate frosting; this boy has a major crush on chocolate cake.
While I adore the small size of this cake, I am going to tell you honestly that I am not a fan of the actual cake recipe; therefore, I am not going to share it here today. Maybe it was too rich for me, maybe I over baked it or maybe the small pan size caused the cake to be too dry. Continue reading
Okay folks, this really is easier than you think! You don’t need super fancy equipment, just a double boiler, melting pot or a good old fashioned microwave, some quality chocolate and fresh strawberries. Here is a quick step by step tutorial for homemade chocolate dipped strawberries!
Fresh and clean
If you invest in quality chocolate, you will be very pleased with the result. The easiest chocolate for you to get your hands on is probably Wilton candy melts. I find that when melted, the candy melts are still fairly thick and require a lot of crisco to be mixed in so that the chocolate is runny and smooth. I am absolutely in love with this chocolate bar I got, and it 2.5 lbs, so I will be able to use it for awhile!

I told you yesterday about my random visit to the Ghirardelli outlet store. While we were there, my boyfriend spotted the Ghirardelli Chocolate Cookbook and bought it for me for Valentines day. I know, I know, it’s early for gift giving, but neither one of us are very good at waiting to give gifts to the other. Well I am (editor’s note: she isn’t.), but he isn’t and that just works for me, because I simply can’t stand waiting for them either.
I had to make the chocolate cupcakes immediately. I really appreciate a good vanilla cupcake, but man, I love chocolate. Today I am pulling out all the stops. This chocolate cupcake is topped with TWO frostings: Ghirardelli Chocolate ganache and Strawberry Swiss meringue buttercream. Add a chocolate covered strawberry and call it a day. Sometimes road trips are insanely long but prove to be exciting and fun when you stumble upon unknown gems in the middle of nowhere. Last weekend, I drove to Lake Tahoe for a snowboard trip; it was at least 10 hours each way. Randomly, while driving home on Interstate 5, my boyfriend suddenly spotted a Ghirardelli outlet and Ice Cream Shop. It went a little something like this:
“Hey look at that!”
“Can we stop?” I shrieked. As if he was going to say no. I mean, are you not going to get a brownie ice cream sundae? Come on! He’s the best.
We pulled quick u-turn and 2 minutes later I was aw-struck by the tantalizing smell of chocolate as we walked through the front door.
“OH MY GOD!” I exclaimed as my boyfriend laughed.
