Does anyone recall my love for Jif Whips? I made this Whipped Chocolate Peanut Butter Frosting and immediately posted it the following day. Jif Whips are what I call a “yellow light food”- which means I need to approach it cautiously, because overindulgence is absolutely going to happen. So I first used it in a frosting and now I am using it for a Peanut Butter Cake Bar.
I adapted this recipe from one of my favorite bloggers, Dorothy at Crazy For Crust. She did a brownie version of this bar. I changed it up using a cake mix base, added some Jif Whips and used crumbled brownies on top. The crumbled brownies were really just a way for me to allow myself to finish the brownies left over from the previous project. Whipped Chocolate Peanut Butter Frosting
Ugh, it’s August and my TV is filled with back to school commercials, Target is packed with pencils and notebooks and kids are eating up every last bit of summer. Confession time; I LOVE school supplies- all of them. I could never have enough notebooks, pens and sticky pads. So when Walkers Shortbread decided to feature back-to-school snack ideas this month, I was pretty excited. What I am even more excited about was their line of mini shortbread cookies. Everything mini is better in my book.
I used Walker’s newest flavor, Mini Crunchy Oatmeal Cookie to makes these Peanut Butter and Jelly Frosted Cookie Sandwiches. Nothing reminds me of back-to-school more than peanut butter and jelly sandwiches. So I took some peanut butter and mixed in some butter and powered sugar to create a peanut butter frosting. Then I added some jelly and a few cookies and you have a quick after school snack that even a mom would enjoy.
What I love about this is you can create a peanut butter and jelly dip to dunk you cookies in too. Each mini bag of cookies comes with 28 cookies and there are four wonderful flavors. The mini bags come in Chocolate Chip Shortbread, Shortbread Fingers, Shortbread Rounds and the newest addition is Crunchy Oatmeal Cookies. I don’t know what I am more excited over: A. This is my 100th post! or B. that I have officially made one of the creamiest, chocolate peanut butter frostings ever! What makes this frosting so special? It uses Jif Whips Peanut butter and Chocolate flavor spread. I recently started seeing Jif Whips all over Instagram and I bought it immediately. It is a chocolate flavored peanut butter spread that is light and airy and pretty much the most addicting peanut butter I have ever tasted. You can literally see the air bubble holes whipped into this spread. So I made this frosting yesterday and knew I had to share it immediately. It is THAT good.
