Funfetti Poke Cake

Cake Batter Poke Cake

Did you all have a good weekend? I sure did! I went down to LA with a friend and she took me on a bakery tour. I can’t wait to tell you guys about it later this week. I saw some pretty amazing flavors and desserts. It gives me some inspiration to get back in the kitchen and get to work.

While I was in Bass Lake this summer, I discovered Birthday Cake Oreos. Umm what? I have been living under a rock? These things are amazing. I knew I wanted to make some sort of dessert with them. So I used them in this Funfetti Poke Cake. What is so amazing about this cake? It is topped with Cake Batter Whipped Cream and Birthday Cake Oreos. This cake is sprinkle overload and I am in love.

I’ve told you before, multiple times probably, that I love boozy desserts. This time I am bringing a little booziness to the poke cake. I have become quite fond of the poke cake. They are just so easy to make, and lets face it, they taste amazing. Today I share the Mudslide Poke Cake with you. It’s got some coffee baked into the cake, a shot a Bailey’s Irish liquor and Kahlua all mixed with a chocolate cake. As much as I would like to throw the term “winning” out there, I think it’s probably an irrelevant term at this point. Yes? No? You tell me.

For the Mudslide Poke cake, I baked and regular boxed chocolate cake mix, but I replaced the water with a strong brewed coffee. Replacing the water for coffee does nothing but add awesomeness to your cake. They say that the coffee actually enhances the chocolate flavor, but who am I to say if that is true? You can’t taste the coffee in the cake, so don’t be afraid of this substitution! I soaked this cake in a Bailey’s infused chocolate ganache and then topped it with what I’m calling mudslide mousse.

Hot Fudge Poke Cake

Poke Cake

So yesterday my birthday, my golden birthday, 27. I cross over from my mid-twenties to my late twenties. Yes, it doesn’t make me a little sad, but when I reflect on where I am at in my life, I am so incredibly happy. You know what else makes me happy? Chocolate cake. I am so much more of a chocolate person than a vanilla person.

I recently posted a French Toast Poke Cake, which you all seemed to really enjoy, so I decided that I needed a poke cake inspired by the new phase in my life. You know what really made me happy on my birthday? A hot fudge sundae and a slice of cake. So today, for you, I combined the two to make a Hot Fudge Poke Cake.

Poke Cake

First of all, let’s revisit the whole concept of a poke cake. You bake a cake, you poke the holes, drizzle the goodness, then top it off with pudding and whipped cream. You proceed to indulge in the best pudding cake ever. This Hot Fudge Poke Cake is a chocolate cake, layered in hot fudge sauce, banana and vanilla pudding, whipped cream, strawberries and toppings of your choice. Continue reading

French Toast Poke Cake

Poke Cake

What’s a poke cake? I started seeing all these different poke cakes on Pinterest, and I had never heard of such a thing. Basically, a poke cake is a cake, which you poke holes in and pour pudding or something similar over the top and allow it to absorb into the cake. You top it off with whipped cream and/or other toppings. Umm, cool! So I did some research and decided to try a French Toast Poke Cake.

What does my cake consist of? It is a cinnamon cake, loaded with maple syrup and vanilla pudding, topped with whipped cream. It’s pretty much dessert for breakfast, or breakfast for dessert. Either way you need to try this! Continue reading
