It’s not a secret around here that I love cupcakes. So this week, I wanted to make my Grandmother’s classic pound cake in a cupcake form. A couple weeks ago, a friend of mine asked me to make cupcakes for her son’s second birthday party. This was the perfect opportunity for Strawberry Pound Cake Cupcakes. California is also in the height of strawberry season, so I am trying to enjoy every last minute of it.
I started with my basic pound cake recipe. For this, I knew I had to fill my cupcake liners mostly full because these wouldn’t rise as much as normal cupcakes. I topped it off with a Strawberry Swiss Meringue Buttercream. This is one of my favorite frostings because it has the fresh strawberries mixed right into the frosting and there isn’t an over powering sweetness from confectionary sugar- because there is none!
Mother’s day is coming up this weekend, as if you didn’t already know that! My mother lives on the other side of the country, but I am so excited because I get to see her the following weekend! Mother’s day is awesome because it’s one of the few days a year that it is acceptable to eat breakfast in bed. I mean, I would eat breakfast in bed all the time if I could. We always got up early to make breakfast for my mom and made her stay in the bedroom until we were finished. So why not try making your mom some muffins this weekend?
We are in the midst of strawberry season here, and I LOVE strawberries! I have been looking for every excuse to bake with them, how else am I going to get rid of the five containers I bought? I looked through dozen of strawberry muffin recipes to figure out what I wanted to do and I am so pleased with the results. I had a few requirements for this recipe. I wanted something with yogurt or sour cream, buttermilk and I wanted to try out my Zulka Pure Cane Sugar. Continue reading
TGIF!! I am so excited for the weekend, more so than normal. It’s been a long week here and we are looking forward to doing some BBQing and Tacoing! I of coarse, am in charge of bringing dessert. Do you like easy to make desserts that will impress your friends? I thought so! I made these dessert nachos last weekend and then proceeded to each half of them by myself.
I first saw dessert nachos when I was in high school. I was visiting one of my friends in Hawaii and we went to dinner before I had to board my long flight back to Vermont. Her mom asked if anyone wanted dessert, and everyone, except my friend passed on the idea. She ordered a massive plate of dessert nachos. When they showed up at the table, she literally would not share, declaring that anyone could order their own plate if they wanted some. She turned to me and said, “You have known me since kindergarten; you know I don’t share my food. I love you, but buzz off”. Despite this betrayal, she is still one my best friends, but guess what, I am NOT sharing these dessert nachos with her! XO.
When booze gets combined with cake, something great usually happens. In this case, it’s Strawberry Margarita Cupcake Shooters with fresh strawberries, lime juice, tequila and cake! These shooters are made with a strawberry cupcake infused with tequila and tequila cream cheese frosting.
These cupcakes are easy to make and can be a fun addition to your Cinco De Mayo festivities! Maybe you feel guilty for drinking a margarita at noon, but you can’t feel bad about eating a cupcake at noon right? That’s my excuse anyway.
